Adding Gluten free pasta like Quinoa Pasta is a great alternative without missing out on all the Pasta ! You wont be able to tell the different pasta origins apart, I promise. Or you can substitute for Rice Pasta!
This is a wonderful anytime Dish balanced by sweet Peas and Bitter arugula. EnJoy!!
Makes 6 Servings
8oz 100 % Quinoa Pasta
2 tbsp Extra Virgin Olive Oil
1 cup diced yellow onion
5 cloves garlic, minced
1/2 cup sun dried tomatoes, cut into thin stripes
4 cups arugula, roughly chopped
8 oz frozen peas, thawed
Salt per taste
Freshly Ground Pepper
2 tbsp parsley, finely chopped
1 lemon
1.Bring a large pot of water to a boil
2. Add the pasta and cook for 8 minutes or until al dente, Drain the pasta and set aside.
3. While the pasta is cooking, heat the oil in a large sauté pan on medium high heat.
4. Add the onion and cook until golden
5. Mix in the garlic and sauce for 30 minutes
6. Add the sun dried tomatoes, arugula, a pinch of salt and pepper to taste and saute just untill the arugula is wilted.
7. Combine the pasta, peas, parsley, and another pinch of salt in the pan and mix together until well combined
8. Add salt n pepper to taste
9. Add a squeeze of lemon at the very end to brighten the whole dish.
