Chocolate Chip Oatmeal Cookies

If your looking for the similar taste and texture of a Classic Cookie, but without the Sugar and
Gluten, this is IT !! They do Contain Sugar, but its less processed, with balance of healthy fats
and fiber from the oats.
Gluten Free Oats are recommended.

For 24 Cookies

2 Eggs
1/2 Cup Almond Butter’
3/4 Cup Sucanat
3/4 Cup Coconut Sugar
1 tsp Vanilla Extract
1/4 Cup Coconut Oil
1 tsp Baking Soda
31/2 oz Organic Dark Chocolate, coarsely chopped
1/2 Cup Sunflower Seeds
3 Cups gluten free Oats

1. Preheat Oven to 350 Degrees
2. Cream together Eggs, Almond Butter, Sugars, Vanilla Extract, and Coconut Oil in a handheld of Standing Mixer
3. Add Baking Soda, chocolate, sunflower Seeds, and oats and mix until well combined.
4.Bake about 12 minutes or until cookies are brown around the edges and still slightly soft in the middle (they will crisp up as they cool) Cool on a rack, EnJoy!!
